Fudgy Vegan Beet Brownies

Servings: 12 brownies

Ingredients:

  • 1 cup pureed beets (about 2 medium beets)
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup coconut sugar or brown sugar
  • 1/3 cup melted coconut oil or almond butter
  • 3 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup toasted walnuts or pecans (optional)

Optional Garnish: Confectioners sugar, sea salt, melted dark chocolate

 

Instructions:

  1. Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper.

  2. In a large bowl, whisk together the beet puree, maple syrup, coconut sugar, melted coconut oil (or almond butter), and vanilla extract until smooth.

  3. Sift in the cocoa powder, whole wheat flour, baking soda, and salt. Stir until just combined—avoid overmixing to keep the brownies fudgy.

  4. Fold in the nuts, if using. The batter will be thick.

  5. Spread the batter evenly in the prepared pan and smooth the top with a spatula.

  6. Bake for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.

  7. Allow the brownies to cool completely before slicing for the best texture.

  8. Enjoy as they are, or take them to the next level with a drizzle of melted dark chocolate or a sprinkle of sea salt.
